By now you probably know that I live in the cold, white (and getting whiter by the day) north - Minnesota! While, I'm not sure I'll ever totally accept the reality of harsh winters here, I do know that there is nothing better to combat the cold - and maybe a little SAD (Seasonal Affective Disorder) too, then a steaming bowl of soup. This is one of our hearty, and oh so easy favorites... enjoy!

Zatarain's Red Beans and Rice Soup
Makes about 10 cups - 4 PointsPlus value(s) per cup
1 package of Zatarain's Red Beans and Rice Mix
16 oz (2 cups) can of non-fat chicken broth
15 oz can of Rotel tomatoes
15 oz can of corn, drained and rinsed
16 oz can of fat-free refried beans
Prepare the Red Beans and Rice Mix per the package directions. Once done, add in the chicken broth, Rotel, corn, and refried beans, bring to a boil, turn down the heat and simmer for about 5 minutes.
Serve with shredded cheese, green onions, tortilla chips or crusty bread, and light sour cream - PointsPlus value(s) not included!
