Lettuce I'm Breaking Up with you

I think I've finally found what my vegetable repertoire was so sadly missing all these years.  I would make a salad, and sure it was OK, but there was nothing that said "Wow amazing salad" about it - same with sandwiches.

Last night I made salads with romaine - my usual lettuce of choice - but this time I added broccoli slaw in... it gave it a little zest AND crunch.  I also added craisins, blue cheese, and garbanzo beans, and topped with Ken's Light Raspberry Walnut Vinaigrette.  Yum, yum, and yum.  What a difference!  Honestly I would have never thought it would make such an impact but it did.

At lunch today, after a 2 hour stroll through IKEA - Do you think I can count Weight Watchers activity points for that? - I was hungry!  I made a sandwich on whole wheat bread, with turkey, 1 slice of salami, 1 piece of leftover bacon from breakfast, some Hellman's light, and more broccoli slaw.  Again... it changed the whole sandwich, AND I got in a serving of veggies! 

As with all amazing ideas, they usually come from someone who has gone before you.  This one is courtesy of Stacy from Kitchenwerks who spoke at the PriorFatGirl get together last Saturday morning.

Lettuce... I hate to break it to you, but I think we should break up. It's me, not you... well... actually there is someone new in my life - Broccoli Slaw!

  1. Jay and I have been using the broccoli slaw on sandwiches and salads too!! It's AMAZING!!

  2. I love broccoli slaw too! I throw in a tortilla with some shredded chicken and a peanut sauce. Yum!

  3. Broccoli slaw is the only kind of slaw that my husband will eat. So I usually have some. I use it in salads, slaws and sometimes in stirfrys. I too have taken to adding more veggies and mixing up the veggies I eat. It's a good thing!
