Zatarain's Red Beans and Rice Soup
Makes about 10 cups - 4 PointsPlus value(s) per cup
1 package of Zatarain's Red Beans and Rice Mix
16 oz (2 cups) can of non-fat chicken broth
15 oz can of Rotel tomatoes
15 oz can of corn, drained and rinsed
16 oz can of fat-free refried beans
Prepare the Red Beans and Rice Mix per the package directions. Once done, add in the chicken broth, Rotel, corn, and refried beans, bring to a boil, turn down the heat and simmer for about 5 minutes.
Serve with shredded cheese, green onions, tortilla chips or crusty bread, and light sour cream - PointsPlus value(s) not included!

So, I got 144 boxes of Zataran's for free a few months ago. I love couponing, but that's a lot of rice. I'm thinking this will be on the menu shortly!!!
