So... I'm determined to post more recipes. I'll try to take pictures, but sometimes that isn't always possible... today was one of the sometimes. I not letting that deter me though.
This is a classic in our house. We started making this when we were in college, and I've always loved the name:
Honey You Have a Way with Chicken
Why thanks.. I do don't I?
1 pound boneless, skinless, chicken breast
1 tsp oil
1-1/2 cups sliced carrots
1-1/2 cups sliced celery
3/4 cup orange juice
1/4 cup honey
3 Tbsp soy sauce
1/2 tsp powered ginger
1 Tbsp Cornstarch
Peanuts
In a skillet heat oil and saute chicken until about 3/4 of the way cooked, add veggies and saute about 5-7 minutes more. Mix together OJ, honey, soy sauce, ginger, and cornstarch in a separate bowl, and pour over chicken/veggies and cook for about 2 minutes more - until sauce is thick.
We sprinkle a few peanuts on top when serving.
4 HUGE servings @ 6 Points Plus each - peanuts not included in this total.
