Tomato Quiche
May 19, 2010I started making this recipe last summer when I had an over abundance of ripe tomatoes. Even though my tomatoes aren't even planted yet, the ones in the store have been really good.
Tomato Quiche (Adapted from the More with Less Cookbook)
Makes 6 servings @ 5 Points Plus per serving
Take a pre made frozen pie crust (I used a Pillsbury frozen crust)
Place in bottom:
2 medium sliced tomatoes
Sprinkle over:
1/2 tsp basil
a handful of fresh chopped chives or green onions
1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
1/2 cup grated mozzarella (part skim) cheese
1/2 cup grated Swiss cheese
Mix together in a separate bowl:
2 eggs
3/4 cup fat free 1/2 and 1/2
2 Tbsp flour
Pour over the top of the pie and all the other ingredients.
Bake at 375 degrees for 40-45 minutes and let sit 5 minutes before cutting.
Serve with a spinach or lettuce salad or fresh fruit
