Salsa Mashed Potatoes

Salsa Mashed Potatoes
6 servings @ 3 points each

1-1/2 lbs of small red potatoes (cut in half)
Roast in a 400 oven with a little olive oil and salt and pepper for 1 hour

Mash and add:
  • 1 cup light sour cream (8 oz container)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 medium tomtato, chopped
  • handful of chopped cilantro
  • salt and pepper to taste.
These were delicious!  Very filling, and made an excellent side dish with grilled chicken.
